ดร. นุชนาถ รังคดิลก, สุมลธา หนูคาบแก้ว และ รศ.ดร. จุฑามาศ สัตยวิวัฒน์ ห้องปฏิบัติการวิจัยเภสัชวิทยา สถาบันวิจัยจุฬาภรณ์ (CRI), สถาบันบัณฑิตศึกษาจุฬาภรณ์ (CGI) และศูนย์ความเป็นเลิศด้านอนามัยสิ่งแวดล้อมและพิษวิทยา อาหารทะเล…ถึงแม้ว่าจะมีราคาค่อนข้างสูง แต่หลายๆคนก็ยังชอบรับประทาน ทั้งกุ้ง หอย ปู ปลา ปลาหมึก เมื่อนำมาประกอบอาหาร ล้วนแต่มีรสชาติถูกปาก เป็นแหล่งโปรตีนที่ย่อยง่ายและสารอาหารที่จำเป็นต่อร่างกายโดยเฉพาะไอโอดีน ไอโอดีนเป็นสารอาหารที่มีความสำคัญในการสร้างไธรอยด์ฮอร์โมน ซึ่งมีบทบาทสำคัญต่อการควบคุมพัฒนาการของสมอง อาหารที่มีไอโอดีนสูง ได้แก่ อาหารทะเลทั้งสัตว์และพืช เช่น ปลาทะเล กุ้งทะเล สาหร่ายทะเล เป็นต้น นอกจากนี้ยังมีการเติมไอโอดีนในเครื่องปรุงรสเค็ม เช่น เกลือ เป็นต้น เพื่อให้สะดวกต่อการบริโภคได้ทุกวัน แต่จากข่าวในหนังสือพิมพ์ ที่มีการตรวจพบปริมาณสารหนูในอาหารทะเล ได้แก่ ตัวอย่างปลาหมึกแห้ง (5 ตัวอย่าง; วันที่ 28 ม.ค. 2554) มีปริมาณสารหนู 0.339-0.858 มิลลิกรัมต่อกิโลกรัม (ข้อมูลจาก http://www.thairath.co.th/content/144507),… (read more)
